The Margherita Bufala is the perfect expression of Neapolitan pizza: three world-class ingredients in flawless balance. We use only San Marzano DOP tomatoes grown on the slopes of Vesuvius, mozzarella di bufala campana flown in fresh weekly, and basil picked daily from our rooftop garden.
The dough undergoes a 48-hour slow fermentation with house levain, producing that signature cornicione — tall, airy, and honeycomb-soft. Our eucalyptus wood-fired oven reaches 480°C and bakes the pizza in 90 seconds flat — the exact time for Neapolitan perfection.
